Take one head of cauliflower and boil or steam in microwave until tender. I've also seen that people used frozen cauliflower but I've never tried that. Don't cook until it's mushy though! Then mash it just as you would potatoes. Add two wedges of Laughing Cow cheese (counts as one healthy fat) and you have Cauliflower mashed "potatoes". This is a staple at our house!..
I take frozen cauliflower, steam it until it is tender, then either use my Ninja or mash it with a fork. To the cauliflower I add garlic salt, black pepper, and LC Light Creamy Swiss (2-4 wedges (healthy fat) depending on my lean section if you incorporate this into your plan). Then I mix it all together... YUMMO and I eat it all the time!.
Per NS: 2 Light LC wedges = 1 Healthy Fat..

1 cup raw Cauliflower (amount dependent on # of servings.. This is for ONE serving).
1 tblspn fat free feta cheese.
1 tsp low fat half & half (fat free has more carbs).
Salt & pepper to taste.
(this is easiest for a single serving to make in a MB or Medifast Blender).
Take cauliflower & put in the MB with cup of water & add steamer lid..
Microwave until soft (about 2-4 minutes depending on your microwave).
Drain water. Add 1 tsp half & half & feta cheese (might need a splash of water).
Add the chopper blade & whip until smooth..
Serving size should be cup cooked!.
My family STILL Doesnt know that it is cauliflower & I'm CONVINCED that the feta helps with the texture!..
For me the key to the mashed cauli no matter recipe you use is to put it in a small baking dish and broil for a few minutes. It really gives it a finished touch..
