Hi I have good success with zucchini recently..
Grate the zucchini. Measure 1.5 cups Measure Egg Beaters out for your usual consistency as potato latkes. Count the portion as your lean proteinyou are allowed 2 cups per lean serving and you'll only need about 2T-4T or so....
Spray with pam AND 1 tsp of olive oil for your healthy fat and voila..
For the spinach, I'd use fresh spinach. And I would measure prior to cooking. To give more consistency and bulk, crush 1 package of the Medifast whole wheat or veggie crackers. Then add the Egg Beaters, oil and pam.
Cauliflower may give you the most "real" potato taste. I steam the cauliflower for 5 minutes in the mic. (I use a microwave steamer and no water...). Mash or whip (I use my Magic Bullet.) Add the egg beater, oil, and pam. No need for the crackers..

I did a google search for Cauliflower latkes and a ton of recipes came up..
This one looked interesting to me: You could use Medifast puffs or Medifast crackers, or Make Medifast bread for the bread crumbs..

Zucchini, green onions, an egg, garlic and onion powder, maybe even a bit of spaghetti squash. I cut the zucchini in the food processor with the cheese grating blade (otherwise, just use a regular cheese grater). Mold into patties, "saut" in olive or canola (or in PAM)...
