Medifast cauliflower pizza recipe?

I'm contemplating making the 'cauliflower pizza'... what do you all put on top of it for your meal? The recipe calls for a full cup of cheese, so do you just put a little on top and call it a snack? or leave a little out of the crust recipe? This sounds super good, but I don't want to make it, love it, and find out later that I'm going way overboard on my calories or carbs....

One "cheese pizza" with NO extra toppings is a full lean & green. I do believe the recipe calls for a portion of the cheese to be reserved and used as a topping..

Adding any other toppings would technically be off-plan..

That being said, I usually add a few slices of green peppers and a few turkey pepperoni slices. It is NOT on plan, but that's what I do nonetheless...

When I get a pizza craving, I use the meatless pizza burger option on the vegetarian list. I'm not a vegetarian, but there are some yummy foods on that list...

I love the pizza but I do not remember it calling for a cup of cheese in the crust. I know that I always had cheese on top of my sauce and oh man it is goooood! I think you should give it a try. I am now in transition and I add slices of peppers on it for my extra veggies. I have one crust left in my freezer so I will be having to make more soon. Hope you give it a try it will be your new fav. L&G...

Thanks for that link the recipe I have was from the 'big list of recipes', I think compiled by 'bigmom'... it calls for 1 full cup of mozzarella, and no ricotta... guess there are a few versions out there!..

This is the approved recipe from my coach and nutrition support and the one I use. I use 1/4 cup Hunts No Sugar Added Italian Style sauce (big can where spaghetti sauces are sold). I make a bunch at a time and freeze them and put the sauce and cheese on after I have reheated the crsut in the oven for a few minutes.. This is the same recipe Kurzweil did a whole picture tutorial for on the Medifast forums. You are well within program guidelines if you use this recipe..

1 c. cauliflower, shredded (2/3 green).

1 oz. low fat ricotta/cottage cheese ( 1/8 lean).

1 oz. light mozzarella (1/4 lean).

1/4 c. Egg Beaters or egg white (1/8 lean).

Seasonings to taste: oregano, garlic powder, etc. (count as condiments).

Spread out into a circle on sprayed parchment paper and bake @ 425 for 45 -60 minutes (much longer than some other recipes - crisper "crust")..

Toppings of your choice:.

1/4 c. tomato puree (cleared by nutrition support as "green" = 1/3 green).

2 oz. light 3-cheese blend (1/2 lean)..

Broiler to melt cheese if preferred..

I enjoyed the cauliflower pizza very much but it was too much cheese for me so I used a little cheese on top but substituted some baked chicken shredded for my protien the next time I made it. I found that to be VERY tasty for me!..
