Double chocolate chip muffin Medifast recipe

Only I find that cooking it in a cereal bowl works well, so it looks more like a cake than a muffin.

1 chocolate chip pancake packet.

1 brownie packet.

3 ounces of water.

Combine the powder in the packets in a microwave-safe cereal bowl. Make a little well in the ingredients in the center of the bowl and pour in your 3 ounces of cold water (this seems to help it mix better). Combine the water & powder, but be careful not to over-mix. I stir a few times until mostly combined and then just kind of push down whatever dry ingredients remain on top..

Microwave for 2-3 minutes. For my microwave, 2:30 is just about perfect, but I'd check it every 15 seconds after 2 minutes. If it's still moist to the touch, add another 15 seconds..

This is makes the most fluffy OP cake/muffin/etc. I've ever had on plan. It's great by itself or with some cream cheese (counts as a condiment) or peanut butter (1 tablespoon counts as a snack)..

I do not have the willpower to eat 1/2 a muffin but I do make plain cc pancake muffins all the time and they are delicious. Same recipe just one packet plus 2oz of water and I use a 1 cup ramakin and nuke for 1 min. 15 seconds..

I have extra brownie trays. I think I will try making this in 2 trays. Not sure how long to nuke them though. Anyone? (assuming I should nuke them one at a time)..

Okay, I made this for my 3:00 meal. Mixed the cc pancake packet, brownie packet, and 3 oz water in a bowl. I mixed well. It started looking like cake batter. I split it between two brownie trays and nuked them one at a time. One minute is just about right for a hot fluffy cake! It's good...

It is a lighter chocolate than the brownie (think German Chocolate Cake) but quite fluffy. I spread a TEAspoon of lf peanut butter on top while hot and it is delish..

O-M-G! This ...sounds .....AWESOME!!! I never got to try the choc chip pancakes but I do love the brownies and I bet that I would totally DIG THIS!!! Right up my alley.

Everyone's microwave is a little different it seems. Mine is relatively new, and 1 min on a single brownie for mine is perfect..

I made this tonight and it was pretty good. I had the whole thing because I need tow meals so that was good. I think I could eat half if I had it for breakfast and then when I got home from work..

I tried this in 2 brownie pans (got the courage from Freedom99). I got mixed up between two recipes and mistakenly put some baking powder. It came out very nice but I will also try again without the BP to avoid using the extra condiments. Thanks all..
