How about mini crustless quiches - op l&g for you too... or a fritatta..
I like veggies either with tuna or (real) crab. Cucumber slices are great instead of crackers for me and others can have crackers as they wish. I've also stuffed small tomatoes or made cucumber or zucchini cups (cut a chunk and scoop out the seeds to make a cup not all the way through)..
I also like deviled eggs, because they're pretty popular (and sometimes veg and seafood aren't).
I've done stuffed mushrooms, using spinach with a little egg, garlic, and parmesan instead of bread crumbs. Or you could use a Medifast pretzel/puff to help replace the bread crumbs..
There's celery sticks with peanut butter too (not too terribly bad)...You didn't mention the type of crowd...
