I don't cook either, but I am a vegetarian so I eat from the meatless list, you could try that, since it is mostly frozen stuff, that you just nuke and eat..
There are other things you can have besides chicken. You can have turkey, beef, egg beaters, fish, seafood..
Variety makes it easier...
I would be more concerned if there was NO reason for the gain. Increased sodium, decreased water, and menstruating are all common culprits for water retention. Oh also stress and strenuous exercise. So if any of the above happen and the scale goes up, wait for that factor to pass before freaking out...
A lb is 3500 calories I'm thinking it must be water weight unless you ate way off plan..
Cottage cheese or tuna don't have to be cooked.
I brown a large amount of ground turkey and season with taco seasoning. I then freeze it in a serving size. Each week I buy romaine lettuce. I zap the meat for a few minutes while I cut up the lettuce and I use the fat free cheese also as part of my lean. Super easy and fast L&G.
Just hang in there you will get better and find good choices.

I have a similar post to yours right now. 3rd week, the scale is showing a gain of 1.6. Like everyone has been telling me, water water water. Mine I think is from dehydration and exercise. I know how discouraging it is but remember that like someone else said, unless you went way off plan, there's no possible way you gained 2lbs! 7000 extra cal than what your body needs to survive? I think not! I was pretty upset about it too, then, my brother came over earlier and said I look like I've lost some weight...ding ding ding! Let's just keep on going, it's working...
